Sutton Hoo Chicken Marinade with Rosemary
Coat your Sutton Hoo Chicken drumsticks or thighs in this delicious marinade. It combines classic garlic and lemon with honey and mustard and the rosemary is amazing on the BBQ, but if the weather is not good for a BBQ you can use a grill pan indoors for the thighs.

Leave the chicken drumsticks and thighs in the marinade for at least an hour and overnight is best.
Serves 4
Ingredients
1 garlic clove, pressed
1 tbsp olive oil
2 tbsp Dijon mustard
2 tbsp honey
1 tsp salt
1 tsp fresh rosemary
½ tsp pepper
1 ½ lbs (680g) skinned and boned Sutton Hoo Chicken thighs or drumsticks
½ a lemon
Method
Combine garlic and the next 6 ingredients above in a large heavy-duty zip-top plastic bag, squeezing bag to combine ingredients.
Add the chicken, turning to coat, and seal bag. Chill for 1 to 24 hours.
Heat the barbecue until the coals are glowing white hot.
Remove chicken from the marinade, discarding marinade.
Grill chicken, covered with grill lid, for 5-7 mins each side.
Transfer chicken to a large piece aluminium foil. Squeeze the juice from half a lemon over the chicken; fold foil around chicken, covering chicken completely.
Let it stand for 10 mins before serving.
