Guest Recipe - Sutton Hoo Chicken Milanese
This recipe is a favourite from local foodie Tony Moorcroft of @FitFatFunFood on Instagram. It is a delicious to cook when entertaining friends or family with a dish that has something for everyone.
Chicken Milanese is traditionally served with spaghetti in tomato sauce but it is also good with a salad or asparagus and new potatoes. Here it is served with tomato sauce and a pea and wild garlic risotto. It is also AMAZING in a decadent sandwich with salad, tomato ketchup and fresh white bread.
INGREDIENTS
2 Sutton Hoo Chicken Breasts
100g breadcrumbs made from stale bread and blitzed in food processor
50g Parmesan
1 large egg
100g plain flour
Salt and pepper
Lemon
Oil for pan frying
METHOD
Place breasts between cling film and bash with the base of a pan to flatten and widen to about 1cm thickness.
Take three dishes and put flour in one, beaten egg in one and in the third one the breadcrumbs mixed with parmesan, salt and pepper.
Take a breast, coat it in the flour, dip in the egg, then press into the breadcrumbs ensuring it is fully coated.
Gently fry for about 5 mins each side and keep warm in oven until you are ready to serve.
Just before serving squeeze on some lemon juice and a pinch of sea salt.
