I love being able to eat in the garden in the summer with my family and friends. Now the weather has finally brightened up, I wanted to share my favourite recipes for al fresco dining to give you that summer feeling – whether you’re soaking up rays or avoiding the rain! I hope you enjoy them.

Belinda’s classic chicken Caesar Salad

This delicious chicken salad is one of my favourites for a summery lunch or light supper. It’s really easy to make – and you can keep the leftovers in the fridge and enjoy them for lunch the next day, too.

Figs and honey chicken with thyme

Is there a better combination than figs and honey? I don’t think so. That’s why I love this recipe, which combines the sweetness of the honey with delicious chicken and thyme. It’s a crowd-pleaser – I love cooking this when friends or family are over for supper.

Three-rice chicken Salad

Another great choice for lunch, this zingy salad is full of healthy protein. It’s a great way to use up leftover chicken from your Sunday roast – so treat yourself to a weekday lunch soaking up the sunshine in the garden. The recipe is adapted from one by Yotham Ottolenghi, who recommends using Asian Shiso leaves, but my recipe uses rocket or mixed leaves as an everyday alternative.

My recipe for these spatchcock chickens will make a deliciously colourful summer lunch. This is best enjoyed al fresco providing a middle eastern feel from the mixtures between sumac, garlic and thyme. I love this recipe because everyone can get stuck in and help themselves which is perfect for an outdoor summer lunch. Spatchcocks are ideal on the BBQ or in the oven, so this meal can be enjoyed no matter the weather.

Sutton Hoo chicken burger: ‘The big gNash!’

This is my favourite recipe for a juicy, flavoursome chicken burger. It’s even more delicious with fresh avocado and smoky bacon. Serve with green salad, coleslaw or sweet potato fries in a lightly toasted brioche bun spread with mayonnaise.
